Easy Meals: Lemon Chicken and Asparagus


This lemon chicken and asparagus dish is a simple and delicious clean meal that is easy to prepare and packed with nutritious ingredients.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 lemon, juiced and zested

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 1 pound of asparagus

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Season the chicken breasts with lemon zest, lemon juice, olive oil, salt, and pepper.

  3. Place the chicken breasts in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).

  4. While the chicken is cooking, trim the woody ends off of the asparagus and toss them with a little olive oil, salt, and pepper.

  5. After 15 minutes of the chicken cooking, add the asparagus to the baking dish and continue to cook for another 10-15 minutes or until the asparagus is tender.

  6. Once the chicken and asparagus are cooked through, remove from the oven and let them rest for a few minutes before serving.
