Easy Non-Processed Meal: Quinoa Salad with Roasted Vegetables

This quinoa salad with roasted vegetables is a simple and delicious non-processed meal that is easy to prepare and packed with nutritious ingredients.


  • 1 cup of quinoa, cooked according to package instructions

  • 1 bell pepper, diced

  • 1 onion, diced

  • 1 zucchini, diced

  • 1 cup of cherry tomatoes

  • 2 cloves of garlic, minced

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • Juice of 1 lemon

  • 2 tbsp fresh basil, chopped


  1. Preheat your oven to 375°F (190°C).

  2. In a mixing bowl, toss the bell pepper, onion, zucchini, cherry tomatoes, garlic, olive oil, salt, and pepper together.

  3. Spread the mixture on a baking sheet and roast for 25-30 minutes or until the vegetables are tender and slightly browned.

  4. While the vegetables are roasting, cook the quinoa according to package instructions.

  5. Once the vegetables are done roasting, remove them from the oven and let them cool slightly.

  6. In a large mixing bowl, combine the cooked quinoa, roasted vegetables, lemon juice, and fresh basil.

  7. Toss everything together until well combined and serve warm or chilled.
